A light, bright supper with barely any washing up. The potatoes lead, the salmon and asparagus need only a short blast, and the lemon-dill butter melts over everything at the table.

The meal, dish by dish

Crushed new potatoes

  • 700 g new potatoes
  • 2 tbsp olive oil
  • Salt
  1. Boil the new potatoes until tender

  2. Drain, lightly crush, toss with oil and salt

  3. Crisp the crushed potatoes in the oven

Roast salmon

  • 4 salmon fillets
  • Olive oil
  • Lemon
  • Salt and pepper
  1. Season the salmon and drizzle with oil

  2. Roast the salmon until just cooked and flaking

Asparagus

  • 2 bunches asparagus
  • Olive oil
  • Salt
  1. Toss the asparagus in oil and roast until tender with a little bite

Lemon-dill butter

  • 60 g butter, softened
  • Zest of 1 lemon
  • 1 tbsp chopped dill
  1. Mash the butter with lemon zest and dill; keep at room temperature
